- Add the Potatoes and Seasoning: Stir in the diced potatoes and Cajun seasoning, coating the vegetables evenly to start developing the soup’s characteristic spicy flavor.
- Pour in Broth and Simmer: Add chicken or vegetable broth and bring to a boil. Reduce the heat and simmer for 15–20 minutes, or until potatoes are tender.
- Blend and Cream: Use an immersion blender to partially blend the soup, leaving some potato chunks for texture. Stir in heavy cream or milk, adjusting consistency as desired.
- Finish and Serve: Return the cooked bacon to the pot. Season the soup with salt and black pepper to taste. Stir well and serve hot with your favorite garnishes.
