Dough Ingredients
- 3 ½ cups all-purpose flour
- 2 ¼ tsp active dry yeast (1 packet)
- 1 ¼ cups warm water (about 110°F/43°C)
- 2 tbsp olive oil
- 1 tbsp sugar
- 1 tsp salt
Filling Ingredients
- 1 cup tomato sauce
- 1 ½ tsp Italian seasoning
- 10–12 slices pepperoni
- 1 ½ cups shredded mozzarella cheese
Instructions
- Prepare the dough: Begin by activating the yeast in warm water with a pinch of sugar, letting it foam for about 5-7 minutes to guarantee a bubbly start. Then, mix the yeast mixture with flour, olive oil, salt, and sugar, kneading until smooth and elastic. Cover and let it rise in a warm place for at least an hour until it doubles in size.
- Roll out the dough: Lightly flour your work surface and roll the dough into a large rectangle, approximately 12 by 16 inches, aiming for an even thickness to ensure uniform baking.
- Spread the sauce: Generously spread your tomato sauce over the rolled-out dough, leaving a small border on the edges to prevent spillage during rolling. Sprinkle Italian seasoning for a fragrant base layer.
- Add the pepperoni and cheese: Evenly distribute slices of pepperoni over the sauce, followed by a thick layer of shredded mozzarella. This layering is key to achieving those gooey, flavorful bites inside your scrolls.
- Roll and slice: Starting at the long edge, carefully roll the dough into a tight log. Once fully rolled, slice the log into equal pieces, around 1.5 inches thick, to create your scrolls.
- Bake: Arrange the scrolls on a lined baking tray, spaced apart to allow for rising, then bake at 375°F (190°C) for 18-22 minutes until golden brown with crispy edges and melted cheese bubbling at the top.
Notes
- Use room temperature ingredients to help the yeast activate properly and ensure even dough rising.
- Don’t overload the filling; too much sauce or cheese can cause soggy scrolls, so balance is key.
- Seal the edges well to prevent fillings from leaking during baking by pinching the dough edges firmly.
- Brush the tops with olive oil or egg wash for beautifully golden tops with a slight sheen.
- Let the dough rest and rise after kneading to make the scrolls soft and airy inside.
