Instructions
- Prepare the Dough: In a large bowl, combine masa harina and salt. Gradually add warm water, mixing with your hands until the dough is soft but not sticky. Cover with a damp cloth and let rest for 15 minutes to hydrate fully.
- Shape the Gorditas: Divide dough into small balls about the size of a golf ball. Flatten each ball gently between your palms or using a tortilla press lined with plastic wrap until approximately 1/4 inch thick rounds.
- Cook the Gorditas: Heat a skillet or griddle over medium-high heat. Cook each gordita for 1–2 minutes per side until lightly golden and slightly puffed. Remove from heat.
- Slice and Fill: Using a sharp knife, carefully slice a pocket into the side of each gordita, creating space for fillings without cutting all the way through. Stuff with your prepared filling of choice.
- Fry the Filled Gorditas: Heat oil in a deep frying pan over medium heat. Fry stuffed gorditas until golden brown and crispy on both sides, about 2–3 minutes per side. Drain on paper towels before serving.

- Keep hands and working surface slightly damp to prevent dough from cracking.
- Resting the dough improves pliability and flavor absorption.
- Maintain moderate oil temperature to cook through without burning.
- Do not overfill to avoid tearing during frying.
