Instructions
- Prepare the Filling: Finely chop the fresh spinach and sauté it with the minced garlic and onion over medium heat until wilted and fragrant. Allow the mixture to cool slightly. In a bowl, combine the cooled spinach mixture with ricotta, grated Parmesan, eggs, salt, and pepper. Mix until creamy and well incorporated.
- Prepare the Pastry: Lay out the phyllo or puff pastry sheets on a clean surface. If using phyllo, layer several sheets together, brushing each sheet lightly with melted butter or olive oil to ensure a flaky and golden texture after baking.
- Assemble the Rolls: Spoon generous amounts of the spinach and ricotta filling onto the prepared pastry sheets. Roll the pastry tightly into cylinders, making sure to seal the edges well to prevent the filling from leaking during baking.
- Bake Until Golden: Place the assembled rolls on a parchment-lined baking tray. Brush the tops with beaten egg to create a shiny, golden finish. Bake in a preheated oven at 375°F (190°C) for 20-25 minutes, or until the pastry is crisp and beautifully golden.
