Instructions
- Step 1: Melt the Chocolate and Butter – Gently melt the dark chocolate and unsalted butter together over a double boiler or in short bursts in the microwave, stirring frequently until smooth and fully combined. Set aside to cool slightly.
- Step 2: Whip the Eggs and Sugar – Using an electric mixer, beat the pasteurized eggs and granulated sugar together until the mixture becomes thick, pale, and fluffy. This is essential for a classic silky mousse texture.
- Step 3: Combine Chocolate with Egg Mixture – Slowly fold the melted chocolate and butter mixture into the beaten eggs and sugar, mixing gently to preserve the airy consistency.
- Step 4: Whip the Cream – In a separate bowl, whip the heavy cream to soft peaks, creating a light and airy texture for the mousse.
- Step 5: Fold in the Whipped Cream and Vanilla – Gently fold the whipped cream and vanilla extract into the chocolate mixture, taking care not to deflate the mousse.
- Step 6: Assemble with Oreo Cookies – Slightly crush the Oreo cookies and layer them at the bottom of serving glasses or a large dish. Pour a layer of chocolate mousse on top, repeat layers, finishing with a mousse layer.
