Pastry & Finishing

  • 1 sheet puff pastry (store-bought or homemade), thawed
  • 1 egg, beaten (for egg wash)

Instructions

  1. Prepare the Filling: Finely chop mushrooms, spinach, garlic, and onion. Sauté garlic and onion in a pan until soft, then add mushrooms and cook until their moisture evaporates. Add spinach last and cook until just wilted. Remove from heat and let cool slightly. Mix in cream cheese and Parmesan until well combined. Season with salt and pepper to taste.
  2. Roll Out the Puff Pastry: Lightly flour your work surface and unfold the puff pastry sheets. Roll gently to an even thickness of about 1/8 inch, smoothing the dough and preparing it for filling.
  3. Assemble the Bites: Cut the puff pastry into 3-inch squares. Place a spoonful of the filling in the center of each. Fold the pastry over to form a triangle or rectangle, pressing edges firmly to seal. Use a fork to crimp the edges for decoration and secure sealing.
  4. Apply Egg Wash and Bake: Brush the tops of the pastry bites with beaten egg wash to achieve a golden finish. Arrange on a parchment-lined baking sheet and bake in a preheated oven at 375°F (190°C) for 15-20 minutes, or until puffed and golden brown.
