Ingredients
Scale
Seafood Mix
- 1/2 lb shrimp, peeled and deveined
- 1/2 lb scallops, chopped if large
- 1/2 lb crab meat (lump or claw)
Vegetables and Aromatics
- 1 cup diced onions
- 1 cup diced celery
- 2 cloves garlic, minced
- 2 tbsp fresh parsley, chopped
- 1 tsp fresh thyme leaves
Sauce Ingredients
- 4 tbsp butter
- 1/4 cup all-purpose flour
- 1 cup chicken broth
- 1 cup seafood broth
- 1 cup heavy cream
Biscuits Topping
- 2 cups Bisquick or biscuit mix
- 1 cup sharp cheddar cheese, shredded
- 1 clove garlic, minced
- 2 tbsp melted butter (for brushing the biscuits)
Instructions
- Prepare the Seafood and Vegetables: Clean and chop your seafood into bite-sized pieces. In a large skillet, sauté the diced onions and celery in butter over medium heat until fragrant and translucent, about 5 minutes.
- Make the Creamy Sauce: Sprinkle the flour over the cooked vegetables and stir continuously to form a roux. Slowly whisk in the chicken and seafood broth, then add the heavy cream, whisking constantly until the sauce becomes thick and velvety.
- Add the Seafood and Herbs: Gently fold the shrimp, scallops, and crab meat into the creamy sauce. Add fresh parsley and thyme, simmering briefly until the seafood is just cooked through to keep it tender.
- Prepare the Cheddar Bay Biscuits: In a mixing bowl, combine the biscuit mix, shredded cheddar cheese, and minced garlic. Add any required liquid as per biscuit mix instructions and form dollops of dough.
- Assemble and Bake: Pour the seafood filling into a baking dish. Spoon the biscuit dough evenly over the surface of the filling. Brush the biscuit tops with melted butter. Bake at 400°F (200°C) for about 20-25 minutes, or until the biscuits are puffed, golden, and cheesy.
Notes
- Use fresh or well-thawed seafood for best texture and flavor.
- Avoid overcooking seafood in the filling to maintain tenderness.
- Use sharp cheddar cheese for a pronounced flavor and better melting.
- Substitute dried herbs with twice the amount if fresh are unavailable.
- Space biscuits evenly on the pot pie to allow proper expansion and browning.
