Perfect for family dinners or casual gatherings, this recipe delivers bold, earthy, and spicy flavors that represent the true taste of Jamaica, using simple, accessible ingredients.

  • Total Time: 1 hour 55 minutes
  • Yield: 6 servings 1x

Ingredients

Scale

Chicken and Marinade

  • 3 to 4 pounds bone-in, skin-on chicken thighs or drumsticks
  • 2 tablespoons Jamaican curry powder (plus extra for toasting)
  • 4 to 5 fresh scallions, chopped, divided
  • 3 cloves garlic, minced, divided
  • 1 tablespoon fresh ginger, grated, divided
  • 1 tablespoon fresh thyme leaves (or 1 teaspoon dried thyme)
  • 2 teaspoons lime juice or vinegar
  • Salt and freshly ground black pepper to taste

Aromatics and Sauce

  • 2 tablespoons vegetable oil or coconut oil
  • 1 medium onion, chopped
  • 1 Scotch bonnet pepper, whole or sliced (optional, for heat)
  • 1 teaspoon allspice (pimento berries), ground
  • 2 to 3 cups chicken stock or water

Instructions

  1. Prepare the Marinade: In a bowl, combine 2 tablespoons Jamaican curry powder, half the chopped scallions, 2 cloves minced garlic, half the grated ginger, thyme, lime juice or vinegar, salt, and black pepper. Toss the chicken pieces in the marinade until fully coated. Cover and refrigerate for at least 1 hour, preferably overnight, to infuse flavors.
  2. Brown the Chicken: Heat oil in a large pot or Dutch oven over medium-high heat. Add the marinated chicken pieces in batches, browning each side deeply to caramelize and seal in juices. Remove chicken and set aside.
  3. Sauté Aromatics: In the same pot, add chopped onions, remaining scallions, Scotch bonnet pepper (if using), remaining garlic, and ginger. Cook until fragrant and softened, about 3-5 minutes.
  4. Add Curry Powder and Spices: Sprinkle in extra Jamaican curry powder and ground allspice. Stir continuously to toast the spices lightly for 1-2 minutes, releasing their aromatic oils.
  5. Simmer the Chicken: Return browned chicken to the pot. Pour in chicken stock or water to just cover the chicken pieces. Bring to a gentle simmer, cover, and cook on low heat for 30 to 40 minutes, until chicken is tender and flavors meld.
  6. Final Seasoning: Taste and adjust seasoning with salt and additional lime juice if desired. Remove from heat and let the curry rest for a few minutes before serving.

Notes

  • Use freshly ground or high-quality Jamaican curry powder for best flavor.
  • Marinating the chicken is crucial for tender, flavorful results.
  • Properly browning the chicken adds depth and complexity to the dish.
  • Simmer the chicken gently to keep it juicy and fully absorb the curry flavors.
  • Adjust Scotch bonnet pepper to suit your heat preference but do not omit entirely for authenticity.
  • For a dairy-free version, omit coconut milk or use coconut oil instead of butter.
  • Leftover curry chicken can be refrigerated for up to 3 days or frozen for up to 3 months.
  • Reheat gently on the stove with a splash of water or stock to maintain moisture.
