Instructions
- Prepare the Crust: Crush the digestive biscuits or graham crackers into fine crumbs. Mix the crumbs with melted butter until the consistency resembles wet sand. Firmly press this mixture into the base of a springform pan to create an even, crunchy foundation for the cheesecake.
- Make the Cheesecake Filling: In a large bowl, beat the softened cream cheese until smooth and creamy. Gradually add the granulated sugar, then add eggs one at a time while mixing. Fold in the sour cream and vanilla extract gently until you have a silky, lump-free batter.
- Mix in the Twix Bars: Chop the Twix bars into small chunks. Gently fold half of these Twix pieces into the cheesecake batter, distributing them evenly without breaking them down too much.
- Assemble and Bake: Pour the cheesecake filling over the prepared crust and smooth the top. Sprinkle the remaining Twix chunks evenly over the surface. Bake in a preheated oven at 325°F (160°C) for 50-60 minutes, or until the edges are set and the center still jiggles slightly when moved.
- Cool and Chill: Allow the cheesecake to cool at room temperature before transferring it to the refrigerator. Chill for at least 4 hours, preferably overnight, to let the flavors meld and the texture set perfectly.
