Instructions

  1. Prepare the espresso soak: Brew ½ cup of strong espresso or coffee and let it cool completely. This soak will be brushed over the cupcake layers to add deep coffee flavor and moisture reminiscent of classic tiramisu.
  2. Make the cupcake batter: In a mixing bowl, whisk together 1 ¼ cups flour, ¾ cup sugar, 2 eggs, 1 teaspoon vanilla extract, and ½ cup softened butter until smooth and creamy. Divide the batter evenly into lined cupcake tins, filling each about two-thirds full for a perfect rise.
  3. Bake the cupcakes: Preheat the oven to 350°F (175°C). Bake the cupcakes for 18-22 minutes or until a toothpick inserted in the center comes out clean. Remove from the oven and let cool completely before proceeding.
