Green Goddess Dressing
- ½ cup Greek yogurt or mayonnaise
- 2 tablespoons lemon juice
- 1 teaspoon anchovy paste
- 3 tablespoons olive oil
- Salt, to taste
- Black pepper, to taste
Instructions
- Prepare the chicken: Cook your chicken until juicy and tender by grilling, baking, or poaching. Let it cool slightly, then shred or cube into bite-sized pieces for even distribution in the salad.
- Make the Green Goddess dressing: In a blender or food processor, combine Greek yogurt or mayonnaise, fresh parsley, tarragon, chives, lemon juice, olive oil, anchovy paste, salt, and pepper. Blend until smooth and creamy. Taste and adjust seasoning as needed.
