Ingredients
Scale
Main Ingredients
- 2 lbs sweet potatoes, peeled and cubed
- 1 tsp ground cumin (plus extra for cooking)
- 1 medium onion, finely chopped
- 2 cloves garlic, minced
- 4 cups vegetable or chicken broth
- 2 tbsp olive oil or butter
- Salt and black pepper to taste
Crunchy Toppings
- Toasted pumpkin seeds
- Crispy shallots
- Crunchy croutons
Optional Ingredients
- 1/2 cup cream or coconut milk (for extra creaminess)
- Pinch of cayenne or red chili flakes (for a spicy kick)
- Fresh cilantro or parsley, chopped (for garnish)
- Smoked paprika (optional for smoky flavor)
Instructions
- Prepare and Roast the Sweet Potatoes: Peel and chop the sweet potatoes into uniform cubes. Toss them with a little olive oil, salt, and ground cumin. Spread them on a baking sheet and roast in a preheated oven at 400°F (200°C) for 25-30 minutes until tender and lightly caramelized to enhance their natural sweetness.
- Sauté Aromatics: While the potatoes roast, finely chop the onion and garlic. In a large pot, heat olive oil or butter over medium heat. Sauté the onion until translucent, then add the garlic and a teaspoon of cumin, cooking until fragrant to deepen the soup’s flavor base.
- Combine and Simmer: Add the roasted sweet potatoes to the pot with the aromatics. Pour in your choice of broth and bring to a boil. Reduce the heat to low and simmer for 15 minutes, allowing the flavors to meld.
- Blend Until Smooth: Use an immersion blender or transfer to a countertop blender and puree the soup until silky and creamy. If too thick, add extra broth or water to reach your desired consistency. Stir in cream or coconut milk for extra richness if desired.
- Add Crunchy Toppings and Serve: Serve the soup hot, garnished generously with your preferred crunchy toppings such as toasted pumpkin seeds, crispy shallots, or crunchy croutons. Add fresh herbs or a drizzle of olive oil for added flavor and texture.
Notes
- Roast sweet potatoes thoroughly to maximize sweetness and depth of flavor.
- Toast cumin spices briefly before use to enhance aroma.
- Use homemade broth for richer complexity, or quality store-bought broth as a convenient alternative.
- Don’t skip the crunchy toppings—they add ideal textural contrast.
- Adjust soup thickness by blending and adding liquid gradually, keeping it pourable.
