Sticky Toffee Pudding

Sticky Toffee Pudding

Sticky Toffee Pudding is a classic British dessert featuring a rich, moist sponge cake made with dates and a luscious toffee sauce. This comforting and indulgent treat combines natural sweetness, tender texture, and deep caramel flavors that make it perfect for cozy nights or special occasions. Easy to prepare with simple pantry ingredients, it can be enjoyed plain or dressed up with cream or ice cream.

  • Total Time: 55 minutes
  • Yield: 6 servings 1x

Ingredients

Scale

For the Pudding

  • 200g dates, chopped
  • 1/2 tsp baking soda
  • 100g unsalted butter, softened
  • 150g brown sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 175g self-raising flour
  • 120ml heavy cream

For the Toffee Sauce

  • 100g unsalted butter
  • 150g brown sugar
  • 120ml heavy cream
  • 2 tbsp golden syrup (optional)

Instructions

  1. Prepare the Dates: Chop the dates and soak them in hot water or tea with a pinch of baking soda. This softens the dates and enhances flavor, ensuring a moist batter.
  2. Make the Sponge Batter: Cream together the softened butter and brown sugar until light and fluffy. Beat in the eggs one at a time, then add the vanilla extract. Slowly fold in the self-raising flour and the soaked dates along with their soaking liquid, forming a smooth batter.
  3. Bake the Pudding: Pour the batter into a greased baking dish and bake in a preheated oven at 350°F (175°C) for 30-40 minutes or until a skewer inserted comes out clean.
  4. Prepare the Toffee Sauce: While baking, heat butter, brown sugar, heavy cream, and golden syrup (if using) in a saucepan. Stir constantly over medium heat until the sauce is thick and glossy.
  5. Serve Warm with Sauce: Once baked, poke holes in the pudding to allow the toffee sauce to soak in deeply. Pour the warm sauce generously over the pudding and serve with whipped cream or vanilla ice cream.

Notes

  • Use fresh or well-rehydrated dates for the best moisture and flavor.
  • Fold the batter gently to keep the pudding light and tender; do not overmix.
  • After baking, poke holes in the pudding to help the sauce soak in fully.
  • Check the pudding with a toothpick to avoid overbaking and keep it moist.
  • The pudding tastes even better the next day as flavors meld beautifully.
