Sausage, Peppers and Potatoes

Sausage, Peppers and Potatoes is a warm, comforting, and hearty one-pan dish that combines savory Italian sausage with sweet and tangy bell peppers, tender potatoes, and aromatic herbs. Perfect for quick weeknight dinners or cozy weekend meals, this versatile recipe is easy to prepare, loaded with vibrant flavors, and loved by the whole family.

  • Total Time: 45 minutes
  • Yield: 4 servings 1x

Ingredients

Scale

Sausage

  • 1 lb Italian sausage (spicy or sweet, whole or sliced)

Vegetables

  • 3 cups Yukon gold or red potatoes, washed and cut into bite-sized cubes
  • 1 red bell pepper, sliced into strips
  • 1 yellow bell pepper, sliced into strips
  • 1 green bell pepper, sliced into strips
  • 1 medium onion, thinly sliced
  • 3 garlic cloves, minced

Oils, Herbs & Spices

  • 3 tbsp olive oil
  • 1 tsp dried oregano
  • 1 tsp dried thyme
  • Salt to taste (about 1 tsp)
  • Black pepper to taste (about ½ tsp)
  • Optional: ¼ tsp crushed red pepper flakes for heat

Instructions

  1. Prepare the Ingredients: Wash and chop the potatoes into bite-sized cubes. Slice the bell peppers into strips and thinly slice the onion. Slice the sausage into thick rounds or leave whole for chunk roasting.
  2. Preheat and Season: Preheat your oven to 425°F (220°C). In a large bowl, toss the potatoes, sliced bell peppers, onions, minced garlic, olive oil, salt, pepper, dried oregano, and thyme until evenly coated with seasoning.
  3. Arrange on Baking Sheet: Spread the sausage and the seasoned vegetables evenly on a large, rimmed baking sheet making sure to keep everything in a single layer to ensure even roasting and caramelization.
  4. Roast Until Tender and Golden: Roast in the oven for 25 to 30 minutes, turning once halfway through cooking. The sausage should be browned and cooked through, while the potatoes become crispy on the outside and tender on the inside.
  5. Serve Warm: Remove from the oven and serve immediately. Pair with a simple green salad or crusty bread to soak up any flavorful juices.

Notes

  • Parboil potatoes for 5 minutes before roasting to reduce oven time and achieve extra tenderness.
  • Use a preheated baking sheet to help create crisp edges on the potatoes.
  • Give the sausage and vegetables enough space on the pan to prevent steaming and promote proper caramelization.
  • Let the sausage rest a few minutes before slicing to retain juices and flavor.
  • Add fresh herbs like parsley or basil just before serving for a bright, fresh note.
