Instructions
- Prepare the Potatoes: Start by washing the potatoes thoroughly. If they are larger, cut them into bite-sized chunks to ensure even roasting. Pat them dry to help achieve that crispy golden crust.
- Season the Potatoes: Place the potatoes in a large bowl and drizzle generously with olive oil. Add minced garlic, fresh herbs, salt, and pepper. Toss everything until the potatoes are evenly coated with the flavorful mixture.
- Add the Feta: Transfer the potatoes to a baking dish and nestle a block of feta cheese right in the middle. Drizzle a little more olive oil over the feta to help it bake into a luscious, creamy centerpiece.
- Roast to Perfection: Place the baking dish in a preheated oven at 400°F (200°C). Roast for about 30-40 minutes, or until the potatoes are tender on the inside and golden with crispy edges, and the feta is soft and slightly browned.
