Instructions
- Roast the Blueberries: Preheat your oven to 375°F (190°C). Toss fresh blueberries with 1 teaspoon of maple syrup and a pinch of cinnamon. Spread them evenly on a baking sheet lined with parchment paper. Roast for 15-20 minutes until the berries bubble and soften, releasing their natural juices.
- Prepare the French Toast Custard: In a shallow bowl, whisk together 3 eggs, ½ cup milk or cream, 1 teaspoon vanilla extract, a pinch of cinnamon, and 1 tablespoon maple syrup or honey to form a smooth custard mixture.
- Slice and Soak the Crostini: Slice the French bread or baguette into ½-inch thick pieces. Quickly dip each slice into the custard mixture, coating both sides lightly but avoiding over-soaking to prevent sogginess.
- Toast the Crostini: Heat a skillet over medium heat and melt butter or warm oil. Cook the soaked bread slices in batches, about 2-3 minutes per side, until golden brown and crispy on the outside but tender inside. Transfer cooked crostini to a serving plate.
- Assemble the Crostini: Spoon roasted blueberries generously over each French toast crostini, allowing the juices to drizzle down. Optionally, dust with powdered sugar and finish with a light drizzle of maple syrup. Garnish with fresh mint leaves or lemon zest and serve immediately.
