Ingredients
Scale
Main Ingredients
- 1 can (14 oz) sweetened condensed milk
- 2 tablespoons unsalted butter
- 1/2 cup finely ground pistachios
- 2 tablespoons heavy cream (optional)
- Pinch of salt
For Rolling
- Pistachio pieces or pistachio powder (for coating)
Instructions
- Combine the Base Ingredients: In a medium saucepan, add sweetened condensed milk, unsalted butter, and finely ground pistachios. Stir the mixture over low to medium heat, making sure nothing sticks to the bottom.
- Cook Until Thickened: Continue stirring continuously as the mixture thickens and starts to pull away from the sides of the pan, about 10 to 15 minutes. The consistency should be creamy, dense, yet spreadable.
- Add Cream and Season: Optionally, stir in heavy cream for extra creaminess and a pinch of salt to balance the sweetness evenly. Mix well to incorporate all flavors.
- Cool the Mixture: Transfer the brigadeiro mixture to a greased plate or bowl and let it cool to room temperature. Then refrigerate for at least 2 hours to firm up for easier handling.
- Shape and Coat: With greased hands, scoop small amounts and roll into bite-sized balls. Roll each ball in crushed pistachios or pistachio powder to coat evenly, adding a crunchy, decorative finish.
- Serve or Store: Arrange your Pistachio Brigadeiros on a decorative platter or paper liners. Store leftovers in an airtight container in the refrigerator.
Notes
- Use fresh, unsalted pistachios finely ground for the best flavor and vibrant green color.
- Stir continuously during cooking to prevent burning and ensure smooth texture.
- Cook on medium-low heat to avoid scorching the condensed milk.
- The brigadeiro is ready when a spoon leaves a clear path through the thickened mixture for a few seconds.
- Chill thoroughly as the cooled mixture is easier to roll and maintains its shape better.
