Ingredients
Scale
Caramelized Pineapple Topping
- 4–6 fresh pineapple rings (ripe and juicy)
- 1/4 cup brown sugar
- 2 tablespoons butter
Pancake Batter
- 1 cup all-purpose flour (or gluten-free flour blend for GF)
- 1 tablespoon baking powder
- 1/4 teaspoon salt
- 1/2 teaspoon cinnamon or nutmeg (optional spices)
- 1 cup milk (dairy or plant-based for vegan/dairy-free)
- 1 large egg (or flax egg for vegan)
- 1 teaspoon vanilla extract
Instructions
- Prepare the Caramelized Pineapples: Melt butter in a non-stick pan over medium heat. Sprinkle the brown sugar evenly and let it dissolve into a glossy caramel. Place pineapple rings carefully into the pan and cook until tender and caramelized, about 2-3 minutes per side. Remove and set aside.
- Mix the Pancake Batter: In a large bowl, combine the flour, baking powder, salt, and optional spices. In another bowl, whisk together the milk, egg, and vanilla extract. Gradually pour the wet ingredients into the dry ingredients, stirring just until combined with some lumps remaining to keep pancakes tender.
- Cook the Pancakes: Reheat the pan with a little butter or oil over medium heat. Pour a ladle of batter onto the pan for each pancake. Place one caramelized pineapple ring onto the uncooked side of the pancake to embed it as it cooks. Flip when bubbles appear on the surface and cook the other side until golden brown.
- Assemble and Serve: Stack pancakes with pineapple rings always on top to showcase their golden caramelized beauty. Add a pat of butter or drizzle with syrup, and serve immediately while warm.
Notes
- Use ripe pineapple for maximum sweetness and juiciness in the caramel glaze.
- Do not overmix the batter to keep pancakes fluffy and tender.
- Cook pancakes on medium heat to avoid burnt edges and ensure even cooking.
- Prepare all ingredients ahead to streamline the cooking process.
- Butter the pan well to prevent sticking and add flavor without saturating the batter.
