Ingredients
Scale
Peach Mixture
- 6–8 fresh ripe peaches, peeled and sliced
- ½ cup sugar
- 1 tablespoon lemon juice
- ½ teaspoon ground cinnamon (optional)
Cobbler Batter
- 1 cup all-purpose flour (or gluten-free flour blend for gluten-free version)
- 1 cup sugar
- 1 teaspoon baking powder
- ¼ teaspoon salt
- 1 cup milk (or plant-based milk for vegan version)
- ½ cup unsalted butter, melted (or coconut oil/vegan margarine for vegan version)
- ½ teaspoon ground nutmeg (optional)
Instructions
- Prepare the Peaches: Peel and slice 6-8 ripe peaches. Toss them with ½ cup sugar, 1 tablespoon lemon juice, and ½ teaspoon cinnamon if desired. Set aside to macerate while preparing the batter.
- Mix the Cobbler Batter: In a bowl, combine 1 cup flour, 1 cup sugar, 1 teaspoon baking powder, and ¼ teaspoon salt. Stir in 1 cup milk and ½ cup melted butter until smooth and just combined, taking care not to overmix.
- Assemble the Cobbler: Pour the batter into a greased baking dish. Spoon the peach mixture evenly over the batter without stirring; the batter will rise around the peaches as it bakes.
- Bake to Golden Perfection: Preheat oven to 375°F (190°C). Bake the cobbler for 40-45 minutes, or until the topping is golden brown and peaches are bubbling.
- Cool and Serve: Allow the cobbler to cool slightly to thicken the juices. Serve warm, optionally topped with vanilla ice cream or whipped cream.
Notes
- Use fresh, ripe peaches for the best flavor and texture.
- Do not overmix the batter to keep the topping tender and light.
- Use high-quality butter for richer crust and a golden color.
- Check doneness with a toothpick – crust is done when golden and toothpick comes out clean.
- Let cobbler rest a few minutes before serving to thicken peach juices.
