Ingredients
Scale
Crust
- Ready-made or homemade buttery pie crust dough, enough to line about 24 mini tart pans or muffin tins
Filling
- 1 cup chopped pecans, toasted
- 3/4 cup brown sugar
- 1/2 cup light corn syrup (or maple syrup as a substitute)
- 2 large eggs, room temperature
- 1/4 cup unsalted butter, melted
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
Instructions
- Prepare the Pie Crust: Roll out your pie crust dough and use a small circular cutter to create mini crusts that fit perfectly into muffin tins or mini tart pans, forming tiny pie shells ready for filling.
- Toast the Pecans: Lightly toast the chopped pecans in a dry skillet over medium heat until fragrant to enhance their natural nuttiness and give your pies extra depth.
- Make the Filling: In a mixing bowl, combine brown sugar, corn syrup, melted butter, eggs, vanilla extract, and salt. Stir until smooth and well blended, then fold in the toasted pecans gently.
- Fill the Mini Crusts: Carefully spoon the filling into each prepared crust, filling each cavity about three-quarters full to prevent overflow during baking.
- Bake to Perfection: Bake your Mini Pecan Pies in a preheated oven at 350°F (175°C) for 20-25 minutes, or until the filling is set and golden on top. Allow them to cool slightly before removing from the pans.
Notes
- Use room temperature eggs for a smoother filling.
- Do not overfill the crusts to avoid spills during baking.
- Allow pies to cool completely so the filling firms up for easier removal and serving.
- Choose fresh, high-quality pecans for superior flavor and texture.
- Pre-bake the crusts for 5 minutes to prevent soggy bottoms.
