Instructions

  1. Prepare the Brownie Base: Melt the dark chocolate and butter together gently, either over a double boiler or in short bursts in the microwave. In a bowl, whisk eggs and sugar until pale and slightly thickened. Fold the melted chocolate mixture into the eggs, then gently incorporate the flour until just combined.   2. Make the Caramel Layer: While the brownie base cools, heat condensed milk or heavy cream with golden syrup and butter over medium heat.   3. Prepare the Chocolate Topping: Melt the semi-sweet chocolate chips or chopped chocolate gently with a bit of butter or cream to create a smooth, glossy ganache. Pour the chocolate layer evenly on top of the set caramel and spread it smoothly. Refrigerate the entire tray for at least an hour until the chocolate hardens but remains snappable.
  4. Slice and Serve: Once fully chilled, use a sharp knife (wiping it clean between cuts) to slice the brownies into neat squares. Optionally, sprinkle flaky sea salt or chopped toasted nuts on top before serving to enhance the flavor and texture.
