Marry Me Salmon

Marry Me Salmon

Marry Me Salmon is an effortlessly elegant and rich dish featuring tender salmon fillets cooked in a creamy sun-dried tomato sauce. Perfect for special occasions or weeknight dinners, this nutritious and flavorful recipe combines simple fresh ingredients for a gourmet restaurant-quality meal with minimal effort and cleanup.

  • Total Time: 25 minutes
  • Yield: 4 servings 1x

Ingredients

Scale

Salmon

  • 4 salmon fillets (fresh or thawed, skin-on or off, about 6 ounces each)
  • Salt and pepper, to taste
  • 2 tablespoons olive oil

Sauce

  • 3 cloves garlic, minced
  • 1/2 cup sun-dried tomatoes, chopped (preferably oil-packed)
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup fresh basil or parsley, chopped

Instructions

  1. Prepare Your Salmon: Pat the salmon fillets dry with paper towels, then season generously with salt and pepper. Heat olive oil in a skillet over medium-high heat until shimmering, then add the salmon skin-side down if using skin. Sear for about 4-5 minutes until the skin is crisp and salmon is golden.
  2. Flip and Remove Salmon: Carefully flip the salmon to sear the other side for an additional 2 minutes, then remove the fillets from the pan and set aside. This ensures the salmon is nearly cooked but leaves room to finish cooking in the sauce.
  3. Make the Creamy Sauce: Lower the heat to medium, add minced garlic to the pan and sauté until fragrant, about 30 seconds. Stir in chopped sun-dried tomatoes and cook for a minute. Pour in the heavy cream, bringing it to a gentle simmer while stirring often.
  4. Add Parmesan and Herbs: Whisk in grated Parmesan cheese until melted and smooth, then fold in chopped fresh basil or parsley. Let the sauce thicken slightly to coat the back of a spoon.
  5. Finish Cooking Salmon in the Sauce: Return the salmon fillets to the pan, spoon some sauce over the top, and cook for another 2-3 minutes until salmon reaches your preferred doneness. The sauce will keep the salmon tender and flavorful.

Notes

  • Let salmon rest at room temperature for 15 minutes before cooking for even doneness.
  • Do not overcrowd the pan; cook in batches if needed to get a perfect sear.
  • Use good-quality oil-packed sun-dried tomatoes for richer flavor and texture.
  • If the sauce becomes too thick, add a splash of chicken broth or water to loosen it.
  • Serve immediately for best moisture and flavor.
