Marry Me Pot Roast

Marry Me Pot Roast is a rich and comforting slow-cooked beef dish featuring tender chuck roast braised in a flavorful sauce made with chicken broth, sun-dried tomatoes, Italian seasoning, and finished with heavy cream. This all-in-one meal includes aromatic garlic and onions, delivers deep, complex flavors, and is perfect for family dinners or entertaining guests with its melt-in-your-mouth texture and luscious sauce.

  • Total Time: 3 hours 15 minutes to 4 hours 15 minutes
  • Yield: 6-8 servings 1x

Ingredients

Scale

Meat

  • 3 to 4 lb chuck roast

Seasonings & Aromatics

  • Salt, to taste
  • Black pepper, to taste
  • 2 tbsp olive oil
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 2 tsp Italian seasoning
  • 1/4 tsp red pepper flakes (adjust to taste)

Liquids & Sauces

  • 2 cups chicken broth
  • 1/2 cup sun-dried tomatoes, chopped
  • 1/2 cup heavy cream

Instructions

  1. Step 1: Sear the Beef
Pat the chuck roast dry and generously season with salt and pepper. Heat olive oil in a heavy-bottomed pot over medium-high heat. Sear the roast for 4-5 minutes on each side until a rich, golden-brown crust forms, locking in the juices and building flavor.
  2. Step 2: Sauté Aromatics
Remove the roast from the pot. Add chopped onions and minced garlic to the same pot and sauté until translucent and fragrant, scraping up any browned bits left from searing the meat to incorporate additional flavor.
  3. Step 3: Build the Sauce
Add chicken broth, sun-dried tomatoes, Italian seasoning, and red pepper flakes to the pot. Stir well to combine, then nestle the roast back into the pot so it is partially submerged in the liquid. Bring the mixture to a simmer.
  4. Step 4: Cook Low and Slow
Cover the pot and reduce heat to low. Cook gently for 3 to 4 hours, allowing the meat to become tender and the flavors to meld beautifully.
  5. Step 5: Finish with Cream
Once the roast is tender and ready, remove it from the pot. Stir heavy cream into the sauce and let it thicken gently. Return the meat (and any vegetables if added) to the pot, coating everything with the luscious cream sauce before serving.

Notes

  • Use a heavy pot such as cast iron or enameled Dutch oven for best heat distribution and searing results.
  • Do not rush the searing step; a well-browned crust adds essential umami flavor.
  • Maintain low heat during braising to keep the meat moist and tender.
  • Allow the roast to rest after cooking for juicier slices.
  • Slice the meat against the grain for maximum tenderness.
  • Serve garnished with fresh herbs like parsley or thyme and freshly cracked black pepper for added brightness and rustic appeal.
  • Leftovers can be refrigerated for up to 3 days or frozen for up to 3 months.
