Ingredients
Scale
Dry Ingredients
- 2 cups all-purpose flour (or gluten-free blend for a gluten-free option)
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 cup brown sugar
Wet Ingredients
- 2 large eggs
- 1 cup buttermilk
- 1/4 cup melted butter
- 1/4 cup maple syrup
- 1 teaspoon vanilla extract
Bacon Glaze
- 6 bacon strips, cooked and crisped, plus 2 tablespoons reserved bacon fat
- 1/4 cup maple syrup
Instructions
- Prepare the Bacon: Cook the bacon strips in a skillet over medium heat until crispy. Drain on paper towels and set aside. Reserve about two tablespoons of bacon fat for the glaze.
- Mix the Dry Ingredients: In a medium bowl, whisk together the flour, baking powder, baking soda, salt, and brown sugar until evenly combined.
- Combine Wet Ingredients: In a separate bowl, whisk the eggs, buttermilk, melted butter, maple syrup, and vanilla extract together until smooth and well blended.
- Blend Wet and Dry: Gradually add the wet ingredients to the dry, stirring gently until just combined. Avoid overmixing to keep your donuts tender.
- Shape and Fry or Bake: For fried donuts, heat oil to 375°F and carefully fry spoonfuls of batter until golden brown on each side, about 2 minutes per side. For baked donuts, pour batter into a greased donut pan and bake at 350°F for 12-15 minutes or until a toothpick comes out clean.
- Make the Bacon Glaze: In a small bowl, whisk together maple syrup and reserved bacon fat. Chop the crispy bacon finely and stir into the glaze for that perfect savory crunch.
- Glaze the Donuts: While the donuts are warm, dip the tops into the bacon glaze or drizzle it generously over them. Allow to set briefly before serving.
Notes
- Use fresh bacon for the best smoky flavor and texture in the glaze.
- Maintain oil temperature at 375°F when frying to avoid greasy donuts.
- Do not overmix the batter to ensure light and tender donuts.
- Glaze the donuts while they are still warm for better adherence and flavor absorption.
- Adjust the maple syrup amount in the glaze to customize sweetness.
