Ingredients
Scale
Chicken
- 2 cups cooked and shredded chicken breasts
Potatoes
- 3 cups diced or shredded Yukon Gold or red potatoes
Dairy & Cheese
- 4 oz cream cheese, softened
- 1 cup sour cream (or Greek yogurt as substitute)
- 1 1/2 cups shredded sharp cheddar cheese, divided
Seasoning and Add-ins
- 1 packet (about 1 oz) ranch seasoning mix (gluten-free if needed)
- 1/2 cup chopped green onions
- Optional: 1/2 cup bacon bits for topping
Instructions
- Prepare the Chicken: Cook chicken breasts by boiling, baking, or pan-searing until fully cooked and tender. Allow to cool slightly, then shred finely so it blends well with other ingredients.
- Combine the Creamy Base: In a large mixing bowl, stir together shredded chicken, softened cream cheese, sour cream, ranch seasoning mix, and chopped green onions until smooth and creamy.
- Add Potatoes and Cheese: Gently fold diced or shredded potatoes into the creamy mixture to coat evenly. Stir in most of the shredded cheddar cheese, reserving a portion for the topping.
- Assemble in the Baking Dish: Transfer the mixture into a greased casserole dish, spreading it out evenly. Sprinkle the reserved cheddar cheese evenly on top, and if desired, add bacon bits for extra smoky crunch.
- Bake Until Golden and Bubbly: Bake the casserole in a preheated oven at 350°F (175°C) for 30-40 minutes, until the cheese is melted, bubbly, and the top is golden brown.
Notes
- Use fresh potatoes and homemade ranch seasoning for the best flavor.
- Gently fold ingredients to avoid a mushy texture.
- Parboil or microwave potatoes before baking to ensure tenderness.
- Choose sharp cheddar for bold flavor or mild cheddar for a gentler taste.
- Let the casserole rest for 5-10 minutes after baking so slices hold together well.
