Knead on a floured surface for 8-10 minutes until smooth and elastic. Place the dough in a greased bowl, cover, and let it rise in a warm place until doubled in size, approximately 1 to 1.5 hours.
- Make the Cheesecake Filling: In a mixing bowl, beat the softened cream cheese with sugar, fresh lemon juice, and vanilla extract until smooth and creamy, with no lumps remaining.
- Assemble the Rolls: Roll the risen dough out on a lightly floured surface into a large rectangle (about 12×16 inches). Spread the cheesecake filling evenly over the dough. Carefully roll the dough up tightly from the longer side into a log. Slice the log into 1 to 1.5 inch thick rolls and place them cut-side up in a greased baking dish, spacing slightly apart.
- Second Rise and Bake: Cover the arranged rolls and let them rise again for 30 minutes to develop fluffiness. Preheat the oven to 350°F (175°C). Bake the rolls for 25-30 minutes, or until golden brown and cooked through.
- Glaze and Serve: While rolls are warm, mix powdered sugar with fresh lemon juice to create a light glaze. Drizzle the glaze over the rolls for a sweet, glossy finish. Serve warm or at room temperature.
