Instructions
- Prepare the chicken: Season the chicken breasts or thighs generously with salt, pepper, and Italian seasoning. Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the chicken and cook for 5-7 minutes on each side until golden brown and cooked through. Remove the chicken from the skillet and set aside.
- Sauté the mushrooms and zucchini: In the same skillet, add the remaining olive oil if needed. Add the sliced mushrooms and let them cook undisturbed for a few minutes until they release moisture and start browning. Then add the zucchini slices and minced garlic, sautéing until the zucchini is tender but still crisp and the garlic is fragrant.
- Combine and finish cooking: Return the chicken to the skillet nestling it among the mushrooms and zucchini. Cook together for a few more minutes to meld the flavors. Taste and adjust seasoning if needed. Optionally, sprinkle with freshly grated Parmesan cheese before serving.
