Instructions
- Prep the Salmon Fillets: Pat the salmon fillets dry with paper towels to ensure the coating sticks well. Lightly season both sides with salt, pepper, and a sprinkle of garlic powder.
- Make the Bang Bang Sauce: In a small bowl, whisk together mayonnaise, sriracha, honey, lime juice, and garlic powder until smooth and creamy. Taste and adjust the spice or sweetness as desired. Set aside.
- Coat the Salmon: Dip each fillet into the mayonnaise mixture first, then press into a bed of panko breadcrumbs to coat thoroughly, ensuring every inch is covered for that signature crunch.
- Cook the Salmon: Heat olive oil or butter in a large skillet over medium-high heat. Carefully place the coated fillets skin side down if skin-on, and cook for 3-4 minutes until golden and crisp. Flip and cook another 2-3 minutes until salmon is just cooked through and flakes easily.
- Plate and Drizzle: Transfer fillets to serving plates, then generously drizzle the remaining bang bang sauce on top or serve it on the side for dipping.
