Instructions

- Deglaze and Braise: Pour in the Guinness stout to deglaze the pan, scraping up browned bits, then add flour to thicken and stir well before adding beef broth, thyme, and bay leaves.
- Slow Cook the Filling: Return the beef to the pot, cover, and simmer gently on low heat for 2 to 3 hours or until the meat is tender enough to melt in your mouth.
- Assemble the Pot Pie: Transfer the beef mixture into a pie dish, cover with your chosen pastry, crimp the edges, and cut slits on top to let steam escape during baking.
