Instructions
- Prepare the Marinade: In a large bowl, combine fresh lemon juice and zest, minced garlic, olive oil, dried oregano, salt, and black pepper. Whisk well until thoroughly blended to create a bright, aromatic marinade.
- Marinate the Chicken and Potatoes: Add the chicken thighs and halved or quartered potatoes into the marinade. Toss well to coat each piece evenly. Let it rest for at least 30 minutes; for best flavor, marinate 2-4 hours in the refrigerator.
- Arrange in Baking Dish: Preheat oven to 400°F (200°C). Transfer the chicken and potatoes to a roasting pan or large baking dish. Spread in a single layer for even cooking and crispy edges. Pour any remaining marinade over the top.
- Roast Until Golden and Tender: Roast in the oven for 45-55 minutes, turning chicken and potatoes halfway through to ensure even browning. The chicken skin should be crispy and golden; potatoes tender inside with a crispy crust. Internal chicken temperature should reach 165°F (74°C).
- Garnish and Serve: Remove from oven and sprinkle with chopped fresh parsley. Serve immediately with Greek salad, tzatziki, pita, or sautéed greens for a complete meal.
