Juicy, succulent chicken thighs with crispy roasted Yukon Gold potatoes are infused with bright lemon, garlic, oregano, and olive oil, making this classic Greek comfort food perfect for any occasion.

  • Total Time: 3 hours (including marinating)
  • Yield: 4-6 servings 1x

Ingredients

Scale

Protein

  • 46 bone-in, skin-on chicken thighs

Vegetables & Fruits

  • 1.5 lbs Yukon Gold or baby potatoes, halved or quartered
  • Juice and zest of 2 medium lemons
  • Fresh parsley, chopped (optional, for garnish)

Aromatics & Herbs

  • 4 garlic cloves, minced
  • 1 tsp dried oregano

Oils & Seasonings

  • 3 tbsp olive oil
  • Salt, to taste
  • Black pepper, to taste

Instructions

  1. Prepare the Marinade: In a large bowl, combine fresh lemon juice and zest, minced garlic, olive oil, dried oregano, salt, and black pepper. Whisk well until thoroughly blended to create a bright, aromatic marinade.
  2. Marinate the Chicken and Potatoes: Add the chicken thighs and halved or quartered potatoes into the marinade. Toss well to coat each piece evenly. Let it rest for at least 30 minutes; for best flavor, marinate 2-4 hours in the refrigerator.
  3. Arrange in Baking Dish: Preheat oven to 400°F (200°C). Transfer the chicken and potatoes to a roasting pan or large baking dish. Spread in a single layer for even cooking and crispy edges. Pour any remaining marinade over the top.
  4. Roast Until Golden and Tender: Roast in the oven for 45-55 minutes, turning chicken and potatoes halfway through to ensure even browning. The chicken skin should be crispy and golden; potatoes tender inside with a crispy crust. Internal chicken temperature should reach 165°F (74°C).
  5. Garnish and Serve: Remove from oven and sprinkle with chopped fresh parsley. Serve immediately with Greek salad, tzatziki, pita, or sautéed greens for a complete meal.

Notes

  • Use room temperature chicken for even roasting.
  • Do not skip lemon zest; it adds essential oils and extra flavor.
  • Pat potatoes dry before marinating to get crispier roasted potatoes.
  • Baste chicken occasionally during roasting with pan juices to keep moist.
  • Substitute dried oregano with fresh herbs if available for more vibrant aroma.
