Instructions
- Prepare the Cereal-Coated Taco Shells: Melt the butter in a small bowl. Lightly brush both sides of each flour tortilla with the melted butter. Dip the tortillas generously into a bowl of Fruity Pebbles cereal, pressing gently so the cereal adheres well. Drape each coated tortilla over the bars of your oven rack or a taco mold to shape it into a shell. Bake in a preheated oven at 350°F (175°C) for 8-10 minutes or until the shells turn crisp and golden. Let them cool completely to hold their shape.
- Make the Cheesecake Filling: In a mixing bowl, beat softened cream cheese until smooth and fluffy. Gradually add powdered sugar while continuing to beat, then stir in vanilla extract. Separately, whip the heavy cream until soft peaks form. Gently fold the whipped cream into the cream cheese mixture until fully combined and airy.
- Assemble the Tacos: After the cereal-coated shells have fully cooled, spoon or pipe the cheesecake filling inside each shell, filling generously. Chill the filled tacos in the refrigerator for at least 30 minutes to allow the filling to set slightly before serving.
