Main Ingredients
- 3 large yellow onions, thinly sliced
- 6–8 slices prosciutto
- 12 oz fettuccine or pappardelle pasta
- 2 tbsp butter
- 1 tbsp olive oil
- 2 cloves garlic, minced
- 1 cup chicken or vegetable broth
- 1/2 cup grated Gruyère or Parmesan cheese
- 1 tsp fresh thyme leaves
- Salt and freshly ground black pepper, to taste
Instructions
- Caramelize the Onions: Thinly slice the yellow onions and cook them slowly in butter over medium-low heat, stirring frequently until they become deep golden brown and release their natural sweetness. This process takes about 25-30 minutes and is essential for developing the rich flavor of the dish.
- Crisp the Prosciutto: While the onions caramelize, heat olive oil in a separate pan over medium heat. Lay the prosciutto slices in a single layer and cook until they become crisp and slightly browned. Remove and drain on paper towels to discard excess oil.
- Cook the Pasta: Bring a large pot of salted water to a boil, cook the pasta until al dente according to package instructions. Reserve 1 cup of pasta water before draining the pasta.
- Build the Sauce: Return the caramelized onions to medium heat, add minced garlic, and sauté for about 1 minute. Pour in the chicken or vegetable broth and let simmer for 5 minutes to intensify the flavor.
- Combine Pasta and Sauce: Add the drained pasta to the onion mixture and toss to coat evenly. If the sauce is too thick, gradually add reserved pasta water to reach desired consistency. Stir in grated cheese and fresh thyme, then season with salt and pepper to taste.
- Serve with Crispy Prosciutto: Plate the pasta and top each serving generously with the crispy prosciutto. Optionally, garnish with extra cheese or herbs for a perfect finishing touch.
Notes
- Cook onions low and slow to get perfect caramelization and avoid burning.
- Reserve pasta water to loosen the sauce without diluting flavors.
- Spread prosciutto slices in the pan so they cook evenly and become crispy.
- Use fresh thyme for the best brightness and aroma.
- Adjust seasoning gradually since cheese and prosciutto contain salt.
