Main Ingredients
- 2 medium zucchinis (grated and well-drained)
- 2 large eggs
- 1 cup panko breadcrumbs (or gluten-free breadcrumbs for gluten-free option)
- 1/2 cup grated Parmesan cheese (or substitute with feta, cheddar, or vegan cheese)
- 2 tablespoons fresh parsley or dill, chopped
- 1/2 teaspoon garlic powder or 1 small garlic clove minced
- Salt, to taste
- Black pepper, to taste
- 2–3 tablespoons olive oil or vegetable oil (for frying)
Optional Variations
- Additional grated vegetables such as 1/4 cup grated carrot, corn kernels, or finely chopped spinach
- Spicy additions like chili flakes or minced jalapeños, to taste
- Herb variations such as basil, thyme, or chives
Instructions
- Prepare the Zucchini: Grate the zucchinis using a box grater or food processor. Place the grated zucchini in a clean kitchen towel or cheesecloth and squeeze out as much excess moisture as possible. This helps the patties hold together and become crispy.
- Combine Ingredients: In a large bowl, mix the grated zucchini with eggs, breadcrumbs, Parmesan cheese, chopped herbs, garlic powder (or fresh garlic), salt, and pepper until evenly incorporated and slightly sticky in texture.
- Form the Patties: Using your hands or a small scoop, shape the mixture into small, flat rounds about 2 to 3 inches in diameter. Avoid making them too thick to ensure even cooking.
- Heat the Pan: Warm a skillet over medium heat and add enough olive oil to cover the bottom. This amount crisps the patties without making them greasy.
- Cook Until Golden: Place patties in the pan without overcrowding. Cook 3-4 minutes on each side until a golden brown crust forms. Flip gently to keep them intact.
- Drain and Serve: Transfer the cooked patties to a paper towel-lined plate to absorb excess oil. Serve warm with your choice of dipping sauce or as a delicious side dish.
Notes
- Drain zucchini thoroughly to prevent soggy patties.
- Do not overmix the batter to keep patties tender.
- Heat the pan well for a crispy outer layer and to prevent sticking.
- Use fresh herbs like parsley or dill for brighter flavor.
- Test cook one patty first to adjust seasoning or texture as needed.
- Serve patties hot and fresh for the best crispness.
