Instructions

  1. Prep and Boil the Carrots: Wash and trim the fresh carrots. Boil or steam them for 10-12 minutes until tender enough to smash but still holding their shape.
  2. Smash the Carrots Gently: Place the softened carrots on a baking sheet. Gently press down each carrot with a fork, potato masher, or bottom of a glass to slightly flatten without breaking apart.
  3. Season and Oil: Drizzle olive oil or melted butter over the carrots. Sprinkle with salt, pepper, and the finely minced garlic or shallots. Toss gently to coat all pieces evenly.
