Instructions
- Prep and Boil the Carrots: Wash and trim the fresh carrots. Boil or steam them for 10-12 minutes until tender enough to smash but still holding their shape.
- Smash the Carrots Gently: Place the softened carrots on a baking sheet. Gently press down each carrot with a fork, potato masher, or bottom of a glass to slightly flatten without breaking apart.
- Season and Oil: Drizzle olive oil or melted butter over the carrots. Sprinkle with salt, pepper, and the finely minced garlic or shallots. Toss gently to coat all pieces evenly.
- Roast Until Crispy: Roast in a preheated oven at 425°F (220°C) for 15-20 minutes until edges become golden brown and crispy, while centers remain tender.
- Finish with Fresh Herbs and Acidity: Remove from oven and immediately sprinkle with fresh herbs. Add a squeeze of lemon juice or a few drops of vinegar to brighten the flavor. Serve warm.
