  • Total Time: 15 minutes
  • Yield: 2-3 servings 1x

Ingredients

Scale

Salad Ingredients

  • 4 cups fresh Tuscan or curly kale, washed and chopped
  • 1 cup croutons (store-bought or homemade)
  • ½ cup freshly grated Parmesan cheese
  • Freshly ground black pepper, to taste
  • Salt, to taste

Dressing Ingredients

  • 2 garlic cloves, minced
  • 1 teaspoon anchovy paste (optional)
  • 2 tablespoons fresh lemon juice
  • ¼ cup Greek yogurt
  • ¼ cup freshly grated Parmesan cheese
  • 3 tablespoons extra virgin olive oil
  • Salt, to taste
  • Freshly ground black pepper, to taste

Instructions

  1. Prepare the kale: Wash the kale thoroughly and remove tough stems, then chop the leaves into bite-sized pieces. Massage the kale gently with a small pinch of salt for about 2-3 minutes to soften the leaves and reduce bitterness.
  2. Make the dressing: In a small bowl, whisk together minced garlic, anchovy paste (if using), fresh lemon juice, Greek yogurt, grated Parmesan, olive oil, salt, and black pepper until creamy and smooth.
  3. Toast croutons: Heat a little olive oil in a pan and toss in cubed bread pieces until golden and crispy. You can also use store-bought croutons if short on time, but freshly toasted ones add a wonderful crunch and aroma.
  4. Toss the salad: Combine the massaged kale with the dressing and toss thoroughly so every leaf is coated. Sprinkle toasted croutons and an additional handful of Parmesan on top for that classic Caesar finish.
  5. Serve immediately: Plate your salad right away to preserve the crisp texture of the kale and croutons, then enjoy your delicious Easy 15-Minute Kale Caesar Salad while it’s fresh and vibrant.

Notes

  • Massage the kale to soften the leaves, making them easier to chew and digest.
  • Use fresh lemon juice instead of bottled to keep the dressing bright and fresh.
  • Make croutons from day-old bread for perfect, sturdy crunch without waste.
  • Grate Parmesan fresh for best melting and flavor.
  • Adjust anchovy paste carefully; start with a small amount to add richness without overpowering.
  • Toss the salad just before serving to keep it vibrant and crunchy.
