Instructions

Place on a parchment-lined baking sheet and score a 1/2 inch border around each piece with a sharp knife to create puffed edges.
- Add a Garlic Olive Oil Layer: Mix minced garlic with olive oil. Brush this mixture inside the scored borders of each pastry piece to infuse subtle garlic flavor and keep the crust moist.
- Arrange the Tomatoes and Mozzarella: Slice tomatoes and mozzarella into thin rounds. Layer tomato slices inside the scored border on each pastry, slightly overlapping. Top with mozzarella slices for a balanced cheesy layer.
- Season and Drizzle: Sprinkle salt, freshly ground pepper, and torn basil leaves over the top. Drizzle with a little extra olive oil to enhance flavor and browning.
- Bake Until Golden and Bubbling: Preheat oven to 400°F (200°C). Bake the tarts for 15-20 minutes until pastry is puffed and golden and cheese is melted and bubbly, watching carefully to avoid burning.
- Add Finishing Touches: Optionally drizzle with balsamic glaze and sprinkle additional fresh basil leaves. Serve warm to enjoy the best flavor and texture.
