  • 4 tbsp butter, cold and cut into small pieces
  • 1 cup milk or buttermilk (or coconut/almond milk for dairy-free)

Instructions

  1. Prep Your Chicken and Vegetables: Place the chicken breasts or thighs into the crockpot. Add chopped carrots, celery, and onions to create the base of your stew.
  2. Add Broth and Seasonings: Pour in the chicken broth and season with salt, pepper, thyme, and parsley. Stir gently to combine all ingredients.
  3. Slow Cook Until Tender: Cover and cook on low for about 6 hours, or until the chicken is tender and vegetables are soft.
  4. Make the Dumpling Batter: While the chicken cooks, mix flour, baking powder, salt, and cold butter. Cut in the butter until the mixture is crumbly. Stir in the milk or buttermilk to form a thick batter suitable for spooning.
  5. Add Dumplings and Cook: After the chicken is cooked, shred the meat directly in the crockpot using two forks. Drop spoonfuls of the dumpling batter onto the surface of the stew. Cover and cook on low for an additional 30 to 45 minutes until dumplings are fluffy and cooked through.
