Ingredients
Fish and Coating
- Fresh cod fillets (cut into sandwich-sized portions)
- All-purpose flour (for dredging)
- Eggs (beaten, for binding)
- Panko breadcrumbs (mixed with seasoning)
- Seasonings: salt, pepper, paprika, garlic powder
- Vegetable oil (for frying)
Sandwich Components
- Sandwich buns (soft and fresh)
- Lettuce leaves
- Tomato slices
- Pickles
- Creamy sauce (tartar sauce, spicy mayo, or lemon aioli)
Instructions
- Prepare the Cod Fillets: Rinse and pat dry the cod fillets. Cut them into portions suitable for sandwiches and season both sides lightly with salt, pepper, paprika, and garlic powder to enhance the natural flavor.
- Set Up Breading Stations: Arrange three shallow dishes: one with all-purpose flour, one with beaten eggs, and one with panko breadcrumbs mixed with the same seasonings. This ensures an even and crispy coating on the fillets.
- Coat the Fillets: Dredge each cod fillet in flour first, shaking off any excess. Next, dip them into the beaten eggs, allowing excess to drip off. Finally, press firmly into the breadcrumb mixture until fully coated.
- Fry the Cod: Heat vegetable oil in a deep pan or fryer to 350°F (175°C). Fry each fillet for 3 to 4 minutes on each side until golden brown and cooked through. Remove and drain on paper towels to eliminate excess oil.
- Assemble the Sandwich: Lightly toast the sandwich buns for extra warmth and texture. Spread your preferred creamy sauce on the bottom bun, add the crispy cod fillet, then layer fresh lettuce, tomato slices, and pickles. Top with the upper bun to complete the sandwich.
Notes
- Oil temperature control: Maintain oil at 350°F for an even, crisp fry without absorbing excess oil.
- Pat dry the fish: Ensures the coating adheres well and crisps perfectly.
- Don’t overcrowd the pan: Fry in batches to keep oil temperature steady and avoid sogginess.
- Use fresh panko breadcrumbs: Stale breadcrumbs result in oily, less crispy coating.
- Let coated fish rest: Allow fillets to sit a few minutes before frying to help coating set.
