  • Total Time: 30 minutes
  • Yield: 12 muffins 1x

Ingredients

Scale

Main Ingredients

  • 1 cup cottage cheese
  • 1 cup fresh blueberries
  • 1 1/2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/3 cup sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/4 cup butter or oil
  • 1/4 teaspoon salt

Instructions

  1. Prepare Your Ingredients: Preheat the oven to 375°F (190°C) and line a muffin tin with paper cups or grease it lightly. In one bowl, measure and mix all dry ingredients – flour, baking powder, sugar, and salt. In another bowl, whisk together the wet ingredients including cottage cheese, eggs, vanilla extract, and butter or oil.
  2. Combine Wet and Dry Ingredients: Gently fold the dry ingredients into the wet mixture, stirring only until combined. Avoid overmixing to keep the muffins tender and light.
  3. Fold in Blueberries: Carefully fold fresh blueberries into the batter to distribute them evenly while preserving their shape.
  4. Fill Muffin Cups and Bake: Spoon the batter evenly into the muffin cups, filling each about 3/4 full. Bake for 18-22 minutes or until a toothpick inserted into the center comes out clean.
  5. Cool and Enjoy: Let the muffins cool in the tin for 5 minutes, then transfer to a wire rack to cool completely before serving.

Notes

  • Use fresh or frozen blueberries; if frozen, add them without thawing to avoid blue streaks in the batter.
  • Do not overmix the batter to ensure muffins stay light and fluffy.
  • Bring eggs and cottage cheese to room temperature for a smoother batter and even baking.
  • Test doneness with a toothpick inserted in the center; it should come out clean.
  • Optionally sprinkle coarse sugar on top before baking for a crunchy finish.
