Instructions
- Prepare the Salmon: Drain canned salmon well, removing any large bones and skin. If using fresh salmon, cook it thoroughly and flake into small pieces with a fork to ensure a uniform texture perfect for patties.
- Mix the Ingredients: In a large bowl, combine the flaked salmon with finely chopped onion, bread crumbs, beaten eggs, mustard, salt, pepper, and cayenne. Mix gently until all ingredients are evenly incorporated, taking care not to overwork the mixture.
- Shape the Patties: Form the mixture into evenly sized patties about 3 inches in diameter and ½ inch thick using your hands or a spoon. Make sure they hold together well but remain light in texture.
- Fry Until Golden: Heat oil or butter in a skillet over medium heat. Add the patties carefully and cook each side for 3-4 minutes until golden brown and crispy. Flip gently to keep the patties intact.
- Drain and Serve: Transfer the cooked patties to a plate lined with paper towels to absorb any excess oil. Serve warm with your choice of garnishes and side dishes.
