Instructions

  1. Prepare and Sear the Beef: Cut beef into thin strips against the grain for tenderness. Heat butter and olive oil in a wide skillet over medium-high heat. Sear the beef in batches until browned on all sides but not fully cooked. Remove beef and set aside.
  2. Sauté the Aromatics and Mushrooms: In the same pan, add more butter if needed. Add chopped onions and minced garlic and cook until softened and fragrant. Add sliced mushrooms and sauté until they release their liquid and begin to brown.
  3. Build the Sauce: Pour in beef broth to deglaze the pan, scraping up browned bits. Stir in Dijon mustard and simmer gently for 5 minutes to reduce and concentrate flavors.
  4. Finish with Sour Cream: Lower heat to low and carefully stir in sour cream to prevent curdling. Return beef to the pan and warm through, coating everything in the creamy sauce. Season with salt and freshly ground black pepper.
