  3. Shape the Mochi Around the Ganache: Dust your work surface and hands generously with cornstarch or potato starch to prevent sticking. Take small portions of the mochi dough, flatten them, and carefully wrap each around a frozen ganache ball. Pinch the edges tightly to seal and roll gently into smooth spheres.
