Instructions
- Prepare the Mashed Potatoes: Boil peeled and cubed potatoes in salted water until fork-tender, about 15-20 minutes. Drain well, then mash with butter, salt, pepper, and minced garlic until smooth but thick enough to hold together. Stir in grated Parmesan and shredded cheese while still warm.
- Add Binding Ingredients: Allow the mashed potato mixture to cool slightly. Then mix in the beaten egg and flour or breadcrumbs to ensure the bites will hold their shape during cooking.
- Shape the Bites: Using your hands or a small cookie scoop, form the mixture into bite-sized balls or small patties. Place them onto a parchment-lined tray, ready for cooking.
- Cook Until Golden: Preheat oven to 400°F (200°C). Bake the bites for 20-25 minutes, flipping halfway through, until golden and crisp. Alternatively, fry in hot oil (350°F / 175°C) until golden and crispy.
