Instructions

  3. Make the Sugar Syrup: Combine equal parts water and sugar in a saucepan. Heat over medium heat, stirring occasionally until the sugar fully dissolves and the syrup becomes clear and warm.
  4. Candy the Lemon Peel: Add the blanched lemon strips to the syrup and simmer gently for 45-60 minutes, or until the peels become translucent. Stir occasionally to coat evenly and infuse sweetness.
  5. Dry and Coat: Using a slotted spoon, transfer the peels onto a cooling rack or parchment paper to dry slightly. If desired, toss the pieces in granulated sugar while still tacky for extra sweetness and sparkle.
