Instructions

  1. Prepare the Filling: In a mixing bowl, combine softened cream cheese, granulated sugar, and vanilla extract. Mix until smooth and creamy. Gently fold in fresh blueberries, cinnamon, lemon zest, or nuts if using, taking care not to mash the berries to keep their juicy texture.
  2. Assemble the Egg Rolls: Place one egg roll wrapper on a clean surface with a corner pointing towards you to form a diamond shape. Spoon about 2 tablespoons of the cream cheese and blueberry filling near the bottom corner. Fold the bottom corner over the filling, then fold in both sides tightly. Roll the wrapper upward to enclose the filling and seal the top corner with a little water to secure.
  3. Fry Until Golden: Heat butter or oil in a frying pan over medium-high heat. Place the egg rolls seam side down in the pan and fry for 2-3 minutes per side or until golden brown and crispy. Remove and drain on paper towels to absorb excess oil.
