Salmon & Pineapple
- 4 thick fresh salmon fillets, skin-on
- 1 cup fresh pineapple chunks, ripe
Marinade
- 3 tablespoons soy sauce
- 2 tablespoons honey
- 2 cloves garlic, minced
- 2 tablespoons fresh lime juice
- 2 tablespoons olive oil
Seasoning & Garnish
- Salt, to taste
- Freshly ground black pepper, to taste
- 2 tablespoons fresh cilantro, chopped (optional garnish)
Instructions
- Prepare the marinade: In a small bowl, whisk together 3 tablespoons soy sauce, 2 tablespoons honey, 2 cloves minced garlic, 2 tablespoons fresh lime juice, and 2 tablespoons olive oil until smooth. This mixture creates the sweet, tangy, and savory glaze that will infuse the salmon during baking.
- Marinate the salmon: Place the 4 salmon fillets in a shallow dish or zip-top bag and pour the marinade over them, ensuring each piece is coated evenly. Let them rest for at least 15 minutes but no longer than 30 to avoid breaking down the fish texture.
- Preheat the oven and prepare the baking dish: Preheat your oven to 400°F (200°C). Lightly grease a baking dish with olive oil to prevent sticking and help achieve a crisp finish on the salmon skin.
- Assemble the salmon and pineapple: Place the marinated salmon fillets skin-side down in the baking dish. Scatter 1 cup of fresh pineapple chunks around and on top of the fillets to add bursts of juicy sweetness during cooking.
- Bake until perfectly tender: Bake uncovered for 12 to 15 minutes, or until the salmon flakes easily with a fork but remains moist inside. The pineapple will caramelize slightly, enhancing texture and flavor.
- Garnish and serve: Sprinkle 2 tablespoons of freshly chopped cilantro over the finished dish for a bright, herbal pop of color. Serve immediately with your choice of sides.
Notes
- Use fresh, wild-caught salmon for best texture and flavor.
- Pat salmon dry before marinating to improve marinade absorption and prevent sogginess.
- Don’t marinate longer than 30 minutes to keep fish tender.
- Use fresh pineapple over canned for natural sweetness and less syrupiness.
- Check bake time closely to avoid drying out the salmon.
- Let salmon rest a few minutes before serving to redistribute juices.
