Ingredients
Scale
Chicken and Cheese
- 4 boneless, skinless chicken breasts
- 1 cup marinara sauce
- 1 cup shredded mozzarella cheese
- 1/4 cup grated Parmesan cheese
- 1 teaspoon Italian seasoning
- 1/2 teaspoon garlic powder
- Salt, to taste
Vegetables
- 1 cup mixed bell peppers, sliced
- 1 medium zucchini, sliced
- 1 cup cherry tomatoes
- 2 tablespoons olive oil
- Salt and pepper, to taste
Instructions
- Preheat and Prepare: Preheat your oven to 400°F (200°C). Lightly grease a baking dish or line it with parchment paper to prevent sticking.
- Season the Chicken: Pat the chicken breasts dry with paper towels. Season both sides generously with salt, garlic powder, and Italian seasoning to ensure flavor throughout.
- Arrange Vegetables: In a bowl, toss the bell peppers, zucchini, and cherry tomatoes with olive oil, salt, and pepper until evenly coated. Spread the vegetables evenly in the prepared baking dish to create a colorful bed.
- Layer Chicken and Marinara: Place the seasoned chicken breasts on top of the vegetables. Spoon a generous amount of marinara sauce over each piece, covering them well to add moisture and tangy flavor.
- Add Cheese: Sprinkle shredded mozzarella and grated Parmesan cheese evenly over the sauced chicken breasts. This will melt and brown to provide the classic chicken parmesan topping.
- Bake Until Perfect: Bake in the preheated oven for about 25 minutes, or until the chicken is cooked through and the cheese is melted and bubbly. Optionally, finish with a 2-3 minute broil for a golden crust.
Notes
- Pound chicken breasts to an even thickness for consistent cooking.
- Use fresh herbs like basil or parsley sprinkled on top after baking for added freshness.
- Do not overcrowd the baking dish to allow vegetables to roast properly instead of steaming.
- Let the dish rest for a few minutes after baking to allow juices to redistribute.
- Customize the cheese blend by mixing mozzarella with provolone or fontina for extra meltiness.
