Instructions
- Prepare the Boudin Mixture: Remove the casing from the boudin sausage and break up the filling in a bowl, mixing the pork and rice evenly to create a uniform base.

- Coat in Egg and Breadcrumbs: Dip each ball into the beaten eggs, then roll thoroughly in breadcrumbs to create a well-coated outer shell.
- Arrange on Baking Sheet: Place the coated balls on a parchment-lined or lightly greased baking sheet, ensuring they are spaced evenly and not touching.
- Bake Until Golden: Preheat the oven to 400°F (205°C). Lightly spray the balls with olive oil and bake for 20 to 25 minutes, turning halfway through baking to achieve an even, golden crust.

- Use firm boudin that is slightly chilled or at room temperature to help the balls hold their shape better.
