Baked Boudin Balls

Baked Boudin Balls

Baked Boudin Balls are delicious, crispy-on-the-outside, savory-on-the-inside snacks that combine traditional Cajun sausage stuffing with a healthier baked method. Perfect for appetizers, parties, or casual snacking, these flavorful bites deliver a golden crunch and rich, smoky taste with minimal effort and easy customization options.

  • Total Time: 35-40 minutes
  • Yield: Approximately 20-24 balls

Ingredients

Main Ingredients

  • Boudin sausage (approximately 1 pound, casing removed)
  • Breadcrumbs (about 1 cup, can substitute gluten-free breadcrumbs or crushed cornflakes)
  • Eggs (2 large, beaten)
  • Olive oil spray (for coating before baking)
  • Optional: hot sauce or spices such as cayenne pepper to taste

Instructions

  1. Prepare the Boudin Mixture: Remove the casing from the boudin sausage and break up the filling in a bowl, mixing the pork and rice evenly to create a uniform base.
  2. Form the Balls: Roll the mixture with your hands into small, bite-sized balls approximately 1 to 1.5 inches in diameter. Place them on a tray or plate.
  3. Coat in Egg and Breadcrumbs: Dip each ball into the beaten eggs, then roll thoroughly in breadcrumbs to create a well-coated outer shell.
  4. Arrange on Baking Sheet: Place the coated balls on a parchment-lined or lightly greased baking sheet, ensuring they are spaced evenly and not touching.
  5. Bake Until Golden: Preheat the oven to 400°F (205°C). Lightly spray the balls with olive oil and bake for 20 to 25 minutes, turning halfway through baking to achieve an even, golden crust.

Notes

  • Use firm boudin that is slightly chilled or at room temperature to help the balls hold their shape better.
  • Don’t skip the egg wash to ensure the breadcrumbs stick and develop a crispy coating.
  • Spray olive oil generously before baking to achieve a perfect crisp without drying out the balls.
  • Watch baking times carefully to avoid overbaking, which can dry out the filling, or underbaking, which won’t produce a crispy shell.
  • Frozen boudin can be used; thaw slightly before removing casing and forming balls.
  • For freezing, freeze uncooked coated balls on a baking sheet prior to transferring to a freezer bag. Bake from frozen adding a few extra minutes.
  • Reheat in the oven at 350°F (175°C) for 10–15 minutes to restore crispness.
