Bacon & Cheese Egg Bites

Bacon & Cheese Egg Bites

Bacon & Cheese Egg Bites are a quick, protein-packed breakfast that’s easy to prepare and perfect for busy mornings. Featuring crispy bacon, melted cheese, and fluffy eggs, these bite-sized delights are customizable, make-ahead friendly, and ideal for a nutritious grab-and-go meal.

  • Total Time: 30 minutes
  • Yield: 12 egg bites 1x

Ingredients

Scale

Main Ingredients

  • 4 large eggs
  • 4 slices of bacon
  • 1/2 cup shredded cheese (cheddar, mozzarella, feta, or gouda)
  • 1/4 cup milk or cream
  • Salt, to taste
  • Black pepper, to taste

Optional Ingredients

  • Fresh parsley or chives, chopped (for garnish and flavor)
  • Sautéed mushrooms or sun-dried tomatoes (for vegetarian variation)
  • Diced jalapeños or pinch of cayenne pepper (for spicy kick)
  • Fresh herbs like basil, thyme, or rosemary (for herb-infused flavor)

Instructions

  1. Prepare the Ingredients: Cook the bacon until crispy and chop it into bite-sized pieces. Grate your cheese and lightly beat the eggs together with milk, salt, and pepper until smooth.
  2. Mix Ingredients: Combine the cooked bacon, cheese, and any optional herbs with the egg mixture. Stir gently to distribute everything evenly without over-beating.
  3. Fill the Muffin Tin: Grease a muffin tin or use silicone liners and pour the mixture evenly into each cup, leaving a little space at the top for expansion.
  4. Bake Until Set: Bake at 350°F (175°C) for about 20 minutes or until the egg bites are fully set and slightly golden on top.
  5. Cool and Serve: Allow the egg bites to cool for a few minutes before removing them from the tin to prevent sticking. Serve warm or store for later enjoyment.

Notes

  • Use room temperature eggs for better mixing and fluffier egg bites.
  • Don’t overfill the molds; leave space for the eggs to rise without spilling over.
  • Cook bacon until crisp to add texture without sogginess inside the bites.
  • Let the egg bites cool slightly before removing from the tin for easier handling.
  • Experiment with combining different cheeses for a richer taste.
